Drying at 350 m above sea level. for about two months. Aging in 25 and 56 hl oak barrels for 20 months. Pre-bottling assembly in steel tanks for 2 months. Bottle refinement takes place in dark, cool cellars for at least a year before marketing.

Tasting Notes: The concentrations achieved and the aromas that develop with drying make it a wine of great finesse and personality. Intense ruby red color. Complex, spicy aroma, with hints of jam and dried red flowers. Warm, vigorous, with a full, rounded and harmonious flavour.
Pairings: Goes beautifully with dishes based on red meat or long-cooked game in sauce; excellent with mature, intense cheeses.
