Obtained from the drying of Droné grapes, ancient vineyards of the Maira Valley. After the harvest, strictly by hand and choosing the best bunches, these are subjected to a drying process on racks which allows the water present in the grapes to evaporate, which ends with a dehydration of 30/40%, so as to obtain wines equipped with a high fragrance with strong characteristics due to the mountain grapes. Chatus is a one-of-a-kind mountain wine. In Dronero there has been certain information about this cultivation since 1300.

Tasting Notes: Intense ruby red color, with a light sweet note. Fruity, spicy bouquet. Dry, satisfying and full-bodied taste.

 

Pairings: Accompanies mature cheeses, stewed meat, boiled meats. Also to be enjoyed with butter biscuits and dry cakes. Meditation wine to sip in company.

 

The Cellar: Founded in 1895 in Roddino d'Alba and included in the Historic Companies of Italy by Vittorio Emanuele Mauro. The Mauro family cultivates ancient vines where the Nebbiolo di Dronero Drôné Chatus is produced, cultivated in the Maira Valley as early as 1200. In this evocative corner of Piedmont, the cultivation of vines has a very ancient history. In 1160 the monks of San Colombano were sent by the Lombard King Ariperto II to cultivate and reclaim these lands; they planted a particular vine called Nebbiolo di Dronero or French Chatus. It is from these cultivations that Drôné is born: intense ruby colour, fresh and fruity aroma of dog rose and raspberries, austere and herbaceous flavour, with a vigorous but elegant body; balanced and harmonious. A very particular and singular wine, strictly typical of the Drone area lands. The vineyards are located in the municipality of Dronero and Villar San Costanzo, over 600 meters above sea level. Production is limited and the bottles are numbered. Mountain wine included in the regional register of historic and heroic vineyards.
