    Special wine produced with Barolo with Controlled and Guaranteed Designation of Origin, flavored with cinchona calissaja bark, rhubarb and gentian root and the precious cardamom seed, whose active ingredients are extracted with slow maceration at room temperature. Characterized by balance and harmony in the aroma, the immediate pleasantness of the taste and the pleasant aromatic persistence. Born in Piedmont in the last century, it spread thanks to the well-balanced bitter-sweet taste and above all to the driving effect in terms of the market of the name "Barolo", which placed it among the noble products compared to the various types of alcoholic beverages based on china.Inventor of an original recipe, Giulio Cocchi was also the protagonist of its diffusion for Barolo Chinato.In Italy the consumption of Barolo Chinato was helped by the reputation it had created as a medicinal wine. In the Piedmontese tradition it became the main antidote to many small ailments, especially cold-related ones. Drunk like mulled wine, warm and invigorating, its antipyretic and digestive properties were praised. Serving it to guests became a ritual gesture of peasant hospitality. Over time, the use of this flavored wine has changed and today, in the wake of the recovery of traditions and naturalness, it is being rediscovered in new and interesting consumption styles.

    Pairings: The occasions to appreciate it are among the most diverse, with particular success in good restaurants: served at room temperature as an elegant end to a meal or heated by steam with an orange peel. Almost surprising is the recent discovery of Barolo Chinato as the "ideal liquid" to support and complete the persistent taste of even the richest chocolates in cocoa. Andrea Slitti, one of the best maîtres chocolatiers, has created an artisanal Barolo Chinato praline of the highest level. It can be consumed at room temperature or slightly chilled, according to your taste preferences. Perfect as a digestive and with meliga or hazelnut pastes, dry pastes or bitter chocolate. Excellent with an ice cube.

     

    The Cellar: Giulio Cocchi was a young and creative pastry chef from Florence who moved to Asti at the end of the nineteenth century. He created original recipes for Barolo Chinato, Aperitivo Americano and several types of Vermouth, achieving success and fame in a short time. Giulio Cocchi's idea, exceptional for the time, was to open authorized retailers where these products could be tasted. Cocchi was a very well-known brand during the Belle Epoque and on the eclectic scene of the futurist period. The Cocchi name and products soon became famous throughout the world as demonstrated by export documents: from New York to London, from Sydney to Africa and Venezuela. Cocchi paid a lot of attention to quality single-variety brut sparkling wines, produced with the Italian method since the 1980s such as CocchiBrut and, more recently, the commitment to the creation and valorisation of the DOCG Altalanga, of which Cocchi is still one of the most busy. From the founder Giulio Cocchi, the winery has also inherited an inexhaustible liveliness and qualitative research that has led it to be known and appreciated on five continents. All Cocchi products are wine-based and the recipes are those of the past, codified based on the intuitions of Giulio Cocchi himself. What defines the Cocchi style is therefore elegance and authenticity, the quality of the wine and the ingredients, the centenary technical experience, a passion and creativity that have never waned over the years. Since 2012 Giulio Cocchi has been registered in the National Register of Historic Companies of Italy for its first 130 years of uninterrupted activity.
