Manual selection of the best grapes. Fermentation at 20 ºC on the skins for 5 days.
After separation from the skins, fermentation continues at 18 ºC. Without the use of added sulphites, at every stage of the production process. Malolactic fermentation followed by refinement sur lies for 6 months in small steel tanks, with weekly batonnage.

Tasting Notes: Brilliant golden yellow with elegant red gold reflections. A "slow" approach to this wine is fundamental, as it can express itself in the glass in a multifaceted and varied way, giving growing sensations of pleasure to those who know how to wait for it.
Pairings: Ideal to accompany many seafood and land dishes, including structured ones, from the local gastronomy. Try it with mature cheeses and as a meditation wine.
The Cellar: We are in the heart of the Tuscan Maremma, among the green hills and horizons that extend towards the Tyrrhenian Sea and its fascinating blue. Here stands an amphitheater made of vineyards, designed by the hand of man with the utmost respect for the environment and the surrounding nature. Tenuta Fertuna, agricultural company located in Grilli, in the province of Grosseto. The company was founded in 1997, and the name refers to the fertility of these splendid lands and the fortune of the men who can dedicate themselves to it with a delicate and harmonious hand, respecting a truly splendid landscape. We find ourselves in land rich in marl and alberese, characterized by a Mediterranean microclimate with a strong marine influence and a good temperature range between day and night. Among the rows, in addition to the legendary Sangiovese, the undisputed king of the entire area, several international vines and other varieties have been planted - such as Vermentino - which are well suited to the conformation of the Maremma. The manual selection of the grapes takes place two or more times a year, so as to ensure the perfect quality of the bunch. The estate today extends for 145 hectares, of which fifty are dedicated to the cultivation of vines while 10 are dedicated to the cultivation of olive trees, present in the native Frantoio, Leccino and Moraiolo varieties. In the cellar, modern accessories are combined with the usual construction simplicity, combined in a highly environmentally sustainable project.
