Tokaji is the sweet Hungarian wine that for centuries has bewitched the palates of all those who love muffatas, indeed we can say that it is the first muffat wine ever produced by umomo. It is a sweet nectar like ambrosia, produced using a special technique, but which has not changed much over the last few centuries: the main characteristic is that it is made from grapes attacked by the famous noble rot, Botrytis cinerea. There are also dry Tokaji, excellent aperitif wines, but on this page we will discuss the most prized and fascinating: Tokaji aszù.

Tasting notes: Intense golden yellow colour, tending towards amber. The nose carries aromas of lemon and candied fruit, enriched by notes of tobacco, mint and pepper, honey and nougat. The palate is intense and full-bodied, pleasantly refreshing, with a very elegant apricot finish.

 

Pairings: Ideal with blue cheeses, this sweet wine goes well with spicy and savoury dishes typical of Chinese or Indian cuisine.


The Cellar: The Tokaj region is famous for its quality wine production. The wines of the area were among the first in the world to obtain the designation of origin. The vineyards of Samuel Tinon are located within the vast Hungarian plain, near the villages of Határi Cru and Olaszliszka. They are exposed to the sun and have a slight slope. The soil is clayey, fertile and rich in tuff and limestone. The favourable climatic conditions allow late harvesting. The grapes are picked at the ideal time of ripeness to produce an intense, full-bodied wine. Samuel knows the terroir of the region like the back of his hand and knows how best to work it. In his soils, indigenous white grapes are planted, such as the Furmint variety, a grape with a pronounced acidity. In a small part, the Hárslevelü grape variety is also cultivated, ideal for making dry, soft and aromatic white wines. The wine is produced in an artisanal manner and as naturally as possible with full respect for the terroir.
