The Pasta Factory: Pasta d'Alba was born in the heart of the Langhe, thanks to the vision of its founder, Dario Mainardi, and his wife, Rosangela, a naturopath: to create a family-run, organic artisanal pasta factory where quality, tradition, and innovation meet. The Diano d'Alba facility houses two separate production facilities: the first, where all the classic and local flours from the artisanal line are processed, along with some typical local recipes. The second, with ministerial authorization, produces and packages all the certified gluten-free products. They work with fresh flours, often stone-ground and sourced from certified organic, sometimes biodynamic, farming methods, such as Italian grains, whole-wheat flours, ancient grains, gluten-free flours, and 100% legume flours. In the facility, tagliolini and tagliatelle are nested by hand, as per tradition. Short pasta such as penne, fusilli, and macaroni is bronze-drawn, giving it the perfect roughness typical of artisanal products, making it perfect for soaking up sauce. The pasta is then slowly dried at low temperatures for at least twenty hours. Drying is the key to product preservation, and the slow, low-temperature process allows for the best preservation and preservation of the flavor and quality of the ingredients. The result is a healthy, flavorful product.
