Shiraz Matarao Bin 2 - Penfolds

 

Bin 2 is obtained from 82% Syrah, called Shiraz in Australia, and 18% Mataro, a name used locally to indicate the Mourvedre grape. These grapes come from different areas where Penfolds owns vineyards: McLaren Vale, Barossa Valley, Langhorne Creek and Wrattonbully. The different microclimates, soils and pedological conditions of these areas allow us to obtain wines with complete and varied profiles. The production style aims to carry out refinements of moderate length, therefore the Shiraz Mataro Penfolds matures for a period of 12 months in both French and American oak barrels.

Tasting Notes: Dense ruby red color, with some reflections still on violet tones. On the nose it intertwines fruity notes of black cherry with a complex spicy texture reminiscent of black pepper and curry, with hints of liquorice and anise. The juice dominates in the mouth, marked by fruity aromas ennobled by a light smoky aftertaste. The body is full and soft, always drinkable and pleasant. Australian sunshine can be reached in one sip.

 

Pairings: Perfect with cheeses, game, meats and pasta with sauces.

 

The Cellar: Penfolds was founded by Christopher Rawson Penfold, a young English doctor firmly convinced of the healing properties of wine who, before leaving Great Britain to emigrate to Australia, procured cuttings from the south of France. The small vines were planted near the cottage that Penfold himself built, together with his wife, in 1845 in Adelaide. Until the second half of the 20th century, the Penfolds winery produced almost exclusively brandies and fortified wines, such as Port or Sherry, used for healing purposes. Towards the middle of the last century, in 1950 to be precise, as a function of changing consumer tastes, the production of table wine began to increase. Among the rows, there is maximum respect for the environment, for nature and for the ecosystem, so the grapes that come to be harvested are all valuable, pure and concentrated in all their organoleptic nuances. In the cellar, from destemming to pressing, from fermentation to aging, from bottling to refinement, each production step is constantly and scrupulously monitored, in order to always guarantee the highest possible level of quality.
