Jalifa Solera Especial from the Williams & Humbert company is a Sherry belonging to the "Amontillado" category. Characterized by the partial development of the flor or the typical veil of film-forming yeasts that originates during the first phase of maturation inside the American oak "botas". The rest within the latter lasts approximately 8 years, after which this Sherry is transferred to the sixth criadera using the Soleras system, for a formidable additional aging of 22 years. A Sherry with a unique taste and style, an excellent aperitif, also excellent with cheeses, cured meats and seafood dishes.

Tasting Notes: In the glass it presents an elegant, amber yellow hue with sparkling topaz reflections. Nose that presents aromas of dried fruit (hazelnuts), aromatic herbs and delicate notes of snuff. Dry and elegant on the palate, with an interesting vein well-balanced acidity that gives way to a long finish, where its characteristic notes of dried fruit resurface.

 

Pairings: Perfect as an aperitif in the company of canapés and various appetizers. We can easily combine it with seafood-based dishes, such as spaghetti with seafood.

 

The Cellar: With almost 140 years of history behind it, the Bodega Williams & Humbert, founded in 1877 by Sir Alexander Williams, a great expert and passionate about Jerez products, and Arthur Humbert, a specialist in international relations, is recognized as one of the most prestigious wineries in Jerez and is renowned worldwide for the production of Sherry. Sherry is a wine with a laborious and sophisticated production; fallen into oblivion for years, it has never actually lost its value as an excellent wine, so much so that lately the spotlight is being turned back on this truly unique product. The Bodegas Williamas & Humbert facilities, believed to be the largest in Europe, are made up of a complex of buildings connected to each other which occupy an area of approximately 180,000 square metres. Bodegas products combine tradition and savoir-faire acquired over the centuries and expressed by the quality of its prestigious labels. The cellar still preserves wines and brandies dating back to the time of its foundation and has obtained the National Architecture Award.
