    Monferrato is the territory of choice for fragrant wines rich in fruit, white grapes for extremely fragrant and aromatic wines with good longevity. The fermentation is preceded by a maceration of the pressed grapes at 10°C and followed by the fermentation of the cold clarified must. The wine is aged sur lie for 10 months in steel vats. Pure Sauvignon Blanc grapes, Bricco della Pieve vineyard in Cocconato.

    Tasting Notes: This Sauvignon fully manifests the character of the territory in terms of aromas and taste, without giving in to the varietal excesses of the grape that make it recognizable and, although vinified in purity, it does not show intense green aromas. Its recognition is given by the hints of apricot, pineapple, rosewood, gooseberry, iris, fresh mint and citrus peel. The taste gives its best with a creaminess supported by the freshness of the balanced acidity and the typical flavor of the lands of origin. Not aged in wood, the wine expresses its best character two or three years after bottling.

     

    Pairings: Excellent with fish dishes, especially raw. Thanks to its soft taste it is also ideal for ethnic or particularly spicy dishes. Also good to pair with white meats, soups, legumes, grilled vegetables and risottos. You can choose to serve Sauvignon as an aperitif, paired with a platter of not too tasty cheeses, asparagus or mixed vegetables.

     

    Cultivation: Low spurred cordon in calcareous soil with white marl at an altitude of 350 meters above sea level. The surface of the vineyard is totally grassed with grasses, legumes and brassicas grown to provide organic substance and defend the slope from rainfall erosion. Along the row and between the plants the growth of the herbs is controlled without resorting to any type of chemical weed control.

     

    The Cellar: The history of the Bava family begins in Cocconato, a town perched on the hills of the Monferrato area of Asti. The Bavas have been cultivating vineyards in this area since 1600, today the property extends across Monferrato and the Langhe, with vineyards and spontaneous woods cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced impact on the environment. Passing by the Bava vineyards, you can notice the grass clippings and pruning remains used as natural fertilizer, the wooden poles coming from renewable forests and the grassing between the rows which prevents soil erosion and guarantees the exclusion of herbicides. In the three farms of Cocconato, Agliano and Castiglione Falletto, excellent and unique wines have been produced for generations. The cellars were founded in 1911 and since 1975 they have been pioneers in the use of barriques.
