Porcini Mushroom Risotto Mix - The Wild Cherries

 

Origin: Italy, Piedmont

Format: 300g

Ingredients: Carnaroli rice (country of origin Italy), porcini mushrooms (Boletus Edulis and its group) 2.4%, onion, parsley.

 

Method of preparation: In a large frying pan with a trickle of oil already hot, pour in the "Risotto preparation" and brown for 1 minute over moderate heat. While stirring, pour in half a glass of water (or white wine) and allow to evaporate. Pour in 700 ml hot water a little at a time and allow to dry out completely (15 min). Adjust salt to taste. Add a knob of butter, allow to thicken for 1 minute.

 

The Cooperative: The Wild Cherries were founded in 2011, in the province of Cuneo. The Cooperative's objective is the employment of disabled people in the agricultural field, facilitating their socialisation, learning abilities, and the development of skills, thereby promoting social cohesion and improving their quality of life. The spaces consist of a mountain plot at an altitude of 1800 m, about 14 hectares in the municipality of Canosio, used for the cultivation of genepy, edelweiss and various medicinal herbs. A hilly plot of about 4 hectares in the municipality of Manta, used for the cultivation of fruit and vegetables; workshop with processing of agricultural products in Verzuolo.
