Tomato Risotto Mix - Cambalache
Carnaroli rice from the Perucca Sergio farm in Motta de' Conti is paired with vegetables grown in the Cambalache community gardens. And thanks to Green4Women's processing, this tomato risotto is born. Ready to cook (260g pack for 3 servings). Sourced from the Cambalache community gardens and from the recovery of surplus produce from local farms. Grown, recovered, and processed, they create employment opportunities for young people, women, and refugees.

Ingredients: Carnaroli rice from Az. Agr. Perucca Sergio di Motta de' Conti (86%); Dehydrated tomato / Dehydrated pumpkin (10%); Dried vegetable flavouring in varying proportions (potato, carrot, fennel, green beans, pepper, onion, pumpkin, chard, courgette, rocket, parsley, cabbage, tomato, cucumber, radicchio, calamint, marjoram, celery, marigold, aubergine)* (4%).
Allergens: May contain traces of wheat, other cereals and hazelnuts.
Preparation: Prepare a hot broth of your choice. Pour the mixture into a saucepan and gently heat, then add the white wine. Gradually add the broth, stirring until cooked through (15-18 minutes). Stir in Parmesan cheese or a knob of butter, if desired, and serve hot.
The Cooperative: Since its inception in 2011, Cambalache has been at the forefront of welcoming and assisting asylum seekers and beneficiaries of international protection. From 2012 to 2019, it managed extraordinary reception projects (CAS), and from 2016 to 2018, in a temporary consortium with Coompany & Soc. Coop. and the Associazione Comunità San Benedetto al Porto, it was the managing body for the SPRAR project, also in the Municipality of Alessandria. In this role, in addition to ensuring reception, it accompanied beneficiaries through all legal and administrative procedures and provided them with linguistic, cultural, and healthcare assistance. Aiming to create effective inclusion paths, Cambalache emphasizes the training of those assisted, through professionalization, retraining, and growth programs, with a focus on career guidance, active citizenship, and learning Italian. To enhance the social impact of hospitality, it promotes volunteering, training for staff, and awareness-raising activities among residents.
