Quiet dry red, non-aromatic, medium-aged. Good odour intensity, medium structure. Fermentation in steel. Maceration about 12 days. Aged for two years, of which at least 12 months in large oak casks.

Tasting Notes: Ruby red of medium intensity with garnet reflections. Spicy notes of cinnamon, nutmeg and under-ripe fruit. Smooth flavour, good tannin texture, acidity well integrated with the sweet notes of ageing in wood. Intense aftertaste with return of spicy notes.
Pairings: Excellent with tasty dishes, agnolotti, risottos and polenta concia, rolate, pheasant and grilled meats. Medium matured cold meats and cheeses.
The Winery: Founded in 1960 by a group of 10 resident winegrowers. The "Cantina dei Produttori Nebbiolo di Carema", through its product of excellence, intends to contemplate the preservation and valorisation of the oenological culture linked to the important wine-making activity in the environment that supports it. A particular and unique landscape, dominated by the renowned terraces on which the pergola-trained vineyards dwell, supported by the characteristic 'Pilun' made of stone and and lime. Carema production is limited to the municipality of the same name, currently covering an area of around 13 hectares, and has been registered in the DOC register since 1967.
