Nebbiolo Canavese Pare DOC - Nebbiolo Producers of Carema
Fermentation takes place for 15 days in temperature-controlled steel tanks. Aged in steel for 5 months and then aged for 3 months in the bottle. Integrated pest management is used and the planting density is 4,000 vines/ha. Annual production is 5,000 bottles, with a yield per hectare of 60 hl/ha. The average age of the vineyard is 10 years. Harvest takes place in October, between the first and second ten days of the year.

Tasting Notes: Medium-intense ruby red with orange highlights. Clear characteristics of the Nebbiolo grape from northwest Piedmont. Delicate and intense aroma with hints of wild berries. Best enjoyed throughout a meal, even on special occasions. A dry, still red, non-aromatic, youthful wine with good aromatic intensity and medium structure. No specific aging period required.
Pairings: Excellent with savory first courses. It also pairs very well with roast red meats, grilled meats, and medium-aged cheeses.
The Winery: Founded in 1960 by a group of 10 resident winemakers, the "Cantina dei Produttori Nebbiolo di Carema" (Carema Nebbiolo Producers' Winery), through its excellent product, aims to preserve and enhance the winemaking culture associated with the important winemaking activity in the environment that supports it. The unique landscape is dominated by the renowned terraces on which the pergola-trained vineyards are located, supported by characteristic stone and lime "Pilun" trellises. Carema production is limited to the municipality of the same name, currently covering approximately 13 hectares, and has been registered as a DOC wine since 1967.
