    Moscato grapes, coming from a historic vineyard in Castiglione Tinella. The grapes, which are collected in wicker baskets, are pressed, and the must is stored at low temperatures. Fermentation takes place immediately before bottling.

    Tasting Notes: Light straw yellow colour, with continuous fountains of fine perlage. Taste strengthened by an extraordinary richness in natural sugar, balanced by perfect acidity.

     

    Pairings: Excellent to accompany fruit tarts, avoiding orange marmalade. Perfect with almond-based desserts and biscuits and with all dried fruit such as Tuscan cantucci. It is a very rich and pleasant wine, of notable balance, and is normally paired with great classic leavened desserts such as Panettone, Colomba and Pandoro. It completes a meal by adapting elegantly to dessert but its moderate alcohol content makes it a delicious natural drink, to be consumed chilled on any occasion and also as an ingredient in thirst-quenching cocktails. The sugary richness, the low alcohol content and the intense aromatic fragrance make it the best ingredient for a refreshing sorbet.

     

    Breeding: Guyot in calcareous soil at an altitude of minimum 250 meters above sea level. The surface of the vineyard is totally grassed with grasses, legumes and brassicas grown to provide organic substance and defend the slope from erosion by the rain. Along the row and between the plants the growth of the herbs is controlled without resorting to any type of chemical weed control.

     

    The Cellar: The history of the Bava family begins in Cocconato, a town perched on the hills of the Monferrato area of Asti. The Bavas have been cultivating vineyards in this area since 1600, today the property extends across Monferrato and the Langhe, with vineyards and spontaneous woods cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced impact on the environment. Passing by the Bava vineyards, you can notice the grass clippings and pruning remains used as natural fertilizer, the wooden poles coming from renewable forests and the grassing between the rows which prevents soil erosion and guarantees the exclusion of herbicides. In the three farms of Cocconato, Agliano and Castiglione Falletto, excellent and unique wines have been produced for generations. The cellars were founded in 1911 and since 1975 they have been pioneers in the use of barriques.
