Montepulciano D'Abruzzo Docheio Aging Amphora DOC 2021 - La Valentina
 
For the creation of Docheio, Fattoria La Valentina prefers a non-invasive approach in the cellar. In fact, they use simple oenological practices that allow them to obtain a fresh and clean wine, not over-extracted. Destemming of grapes. Maceration and fermentation in Impruneta terracotta jars of whole grapes with and without stems for 4 months. After racking, it is decanted again into the same jars for a further 6-month period.

Tasting Notes: Dark ruby with interesting garnet reflections; the nose is very intense, the wild strawberries stand out, with blackberry and wild red fruits, black spices and complex scents creep in little by little. On the palate it is full-bodied, decisive, intense, with mature and important tannins but with great balance. The finish is fresh and with excellent aromatic persistence.
 
Pairings: It is ideal to accompany roasts, stews, game, Callara sheep and mature cheeses.
