Malvasia Castelnuovo Don Bosco Rosetta DOC - Cantine Bava
This winemaking process involves cold maceration of the crushed grapes for two days before pressing them: the free-run must immediately develops its strong aroma and beautiful color. The decanted must is stored at a low temperature until fermentation in steel vats, which can take place up to several months after harvest. It does not require bottle aging. Made from 100% Malvasia di Schierano grapes, from managed vineyards in Albugnano, Pino d'Asti, and Castelnuovo Don Bosco.

Tasting Notes: It has a beautiful cherry red color and a small crown of bubbles. It has an intense aroma of wild rose and strawberries, sweet and balanced; the tannins are barely perceptible and leave the wine's pleasantness intact. Naturally lively, with a balanced flavor.
Pairings: It is at its best on festive occasions and at the end of a meal, with fruit tarts, friandises and ripe red fruit. An unparalleled wine to drink “pied dans l'eau”.
Vineyard training system: Guyot, at an altitude of 300 meters above sea level. The soil is white limestone with large yellow sand banks, marine fossils, and chalk outcrops. The vineyard is completely grassed with grasses, legumes, and brassicas, cultivated to provide organic matter and protect the slope from rainfall erosion. Along the rows and between the vines, grass growth is controlled without the use of any chemical weedkillers.
The Winery: The Bava family's history begins in Cocconato, a village perched in the hills of the Monferrato area of Asti. The Bava family has been cultivating vineyards in this area since the 1600s. Today, the property extends into the Monferrato and Langhe regions, with vineyards and spontaneous woodlands cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced environmental impact. Driving past the Bava vineyards, you'll notice grass clippings and pruning residues used as natural fertilizer, wooden poles sourced from renewable forests, and grass cover between the rows, which prevents soil erosion and ensures the exclusion of herbicides. The three farms of Cocconato, Agliano, and Castiglione Falletto have been producing excellent and unique wines for generations. The wineries were founded in 1911 and have been pioneers in the use of barriques since 1975.
