The wine is vinified in steel and remains there for a year, until bottling which takes place during the following harvest, in October.

Tasting Notes: Nebbiolo, grown on our hills, gives us a wine with a ruby color that fades to garnet as it evolves. On the nose you can perceive the aromas of small red fruits, such as raspberries, wild strawberries, but also of peach, plum and notes of flowers typical of our territory. The taste is made up of a medium structured body and a sweet and enveloping tannin, characteristic of our lands.

 

Pairings: It is ideal in combination with meat sauces and appetizers, such as knife steak.

 

The Cellar: A story that begins in 1862 in Canale. The origins of the Rabino family date back to the Middle Ages, the settlement in the Roero, in the same lands that are still owned by the family today, followed their removal from the Alta Langa due to the frequent barbarian incursions. Wine production began in the mid-19th century with a small production reserved for family and friends: a passion that still did not represent a profit. Luigi Rabino, grandfather of the current owner and subsequent descendants, will then market the wines. Already during the period preceding the world wars, many of the varieties still produced were bottled. Sharing, overcoming difficult historical moments of the 20th century and increased demand have made the company today a Roero reality with diversified and almost fully self-sustainable production.
