Dry Gin Ki No Bi - Kyoto Distilleries
The first Japanese gin produced in Kyoto. KI NO BI ('The Beauty of the Seasons') is inspired by tradition and is distilled, blended, and bottled in Kyoto. This gin is crafted in a recognizable dry style but with a distinct Japanese accent. KI NO BI Kyoto Dry Gin is created with Japanese botanicals such as yellow yuzu from northern Kyoto Prefecture, hinoki (Japanese cypress) wood chips, bamboo, gyokuro tea from the Uji region, and green sanshō (Japanese peppercorn) berries. Bottled at 45.7% ABV, KI NO BI uses a rice spirit base and the unrivaled purity of Fushimi water (the same water used to brew the renowned sake).

Tasting Notes: It is crafted by mastering not only the science of distillation as others have done before, but also the ancient art of blending, separating the botanicals in the gin into six different, individually distilled categories: Base, Citrus, Tea, Herbal, Spice, and Floral. They are then blended in perfect balance, creating the distinctive KI NO BI flavor. A gin that speaks of its birthplace. Clear as the air in the sacred mountains of Kyoto, it features a fresh aroma of yuzu and a hint of sansho that lingers like a morning mist in a bamboo forest. Juniper complements and showcases the Japanese botanicals. Ginger root provides a slightly warm and spicy finish.
The Distillery: The Kyoto Distillery is an artisanal distillery founded in Kyoto, a city with a proud history spanning over a thousand years, which is the source of inspiration for the distillery itself. Not only is Kyoto the perfect place to produce such an artisanal product, but it also offers an abundance of raw materials to work with: the Fushimi soft waters, renowned for producing top-quality sake for centuries, and a huge selection of locally grown ingredients, such as yuzu, sansho, and the legendary Uji teas.
