Tasting Notes: Amber yellow, delicate and elegant. Aromatic and soft on the nose, characterized by olfactory hints reminiscent of honey and followed by light citrus nuances of lemon. The attack on the palate is sweet, smooth and pleasantly fruity. Excellent persistence.

 

The Distillery: John Morrison bought the Knock property from the Duke of Fife in 1892. The proximity to the railway network of northern Scotland and the Moray region, characterized by the large presence of barley plantations and peat deposits, made the conditions optimal to start the activity that was dear to John Morrison: producing whisky. Production began in October 1894. Knockdhu, equipped with a 16-horsepower steam engine used for crushing barley, was capable of processing 2,500 gallons of spirit per week, and was regarded as the first modern distillery. Already at the beginning of the new century the staff consisted of 19 people, and the success that this project was demonstrating made us think about the future potential of this whisky. The distillery continued to work at full capacity until 1931, when it had to close for a few years due to the economic depression. The restrictions of the war prevented it from having enough barley, which is why the company faced a second period of closure, from 1940 to 1945. After the war, a period of modernization followed, which among other things, made the distribution of Whiskey possible throughout the nation. Although the original steam engine still worked, it was replaced by a modern one in 1947. Despite the closure of the railway line in 1960, the production of whiskey continued until 1982, when Knockdhu became one of the twelve distilleries owned by Scottish Malt Distillers, which had to close due to the increasingly decreasing demand for the product. This closure was a hard blow for the local community, but in 1989, fortunately, it resumed its activity. The production methods remained unchanged, traditional, but what changed was the name of the product. This was replaced in 2000 with anCnoc, a Gaelic word of Scottish origin, which literally means hill.
