Ermitage Rouge Le Pavillon AOC Biodynamic Agriculture - M Chapoutier
The sumptuous Ermitage Rouge AOC Le Pavillon comes from the best bunches harvested by hand in the vineyard of the same name, characterized by the presence of plants with an average age of 60 years, which sink their roots into the granite-rich soil. The bunches are completely destemmed and the fermentation in cement is carried out at high temperature for at least 20 days. The maturation of 20 months is carried out in wooden barrels of various passages. A great Syrah, for years at the top of the denomination and one of the most renowned standard-bearers of the fine range of wines signed by M. Chapoutier.

Tasting Notes: Deep ruby red, with purple hues at the edge. Intense and complex nose with notes of ripe red and black fruits, refined spices, liquorice, black pepper and graphite. When tasted it proves to be textural and juicy, with surprisingly silky and integrated tannins. The acidity and marked flavor make it elegant and long, while it exhibits a complex sequence of fruity aromas, which lead to the balsamic and spicy finish.
Pairings: Full-bodied and elegant red, to pair with grilled red meats and game and mature cheeses.
