Dry Gin Kyoto SEI - Ki No Bi
The first Gin in the range created by The Kyoto Distillery is this Dry Gin “KI NO BI”. It is a product that arises from the presence of typical Japanese botanical elements, such as yuzu, Japanese cypress, bamboo and gyokuro tea, mixed starting from an alcoholic rice base. A bottle with a subtle and enveloping olfactory range, perfect for tasting neat or with a few ice cubes.

Tasting Notes: Crystalline, clear and colorless to the eye. From the first moments on the nose there is a clear reference to yuzu, a fruit halfway between mandarin and Papeda, grown in the northern prefecture of Kioto, enriched by sensations of flowers and balsamic herbs. On the palate it has a warm, spicy, well-made sip, with a beautiful harmony.
Cocktail: Perfect to be enjoyed neat or with a few ice cubes.
The Distillery: The Kyoto Distillery is a small distillery located in the southern district of the city of Kyoto, entirely dedicated to the artisanal production of Gin. Its establishment is very recent: it opened its doors in 2016 thanks to the partnership of two entrepreneurs, who availed themselves of the consultancy of the Master Distiller Alex Davies and the Japanese spirits expert Masami Onishi. As the operational headquarters it was decided to opt for Kyoto in as its history, rich in traditions and cultures, symbolizes what one wants to obtain from a profoundly artisanal production. Furthermore, the city is geographically located in a more than strategic position to obtain raw materials of absolute quality: the waters of the Fushimi are not far away from the distillery headquarters, as well as most of the botanicals used during the manufacturing process are found in the surrounding areas; as if that wasn't enough, Kyoto is also at the center of rice winemaking, and is the home of "nihonshu", that is, the type of sake most easily appreciated in the West.
