Cognac XO Fine Champagne - AE Dor
From the vast experience and rigorous respect for tradition of the Maison AE Dor comes AE Dor Cognac XO FC Dor. A fine, highly aromatic, and elegant spirit. This cognac is made from Ugni Blanc (known in Italy as Trebbiano), Folle Blanche (a native white grape variety from the Champagne region), and Colombard. Respect for tradition begins in the vineyard. The grapes are grown in highly suitable areas, characterized by a mild climate and calcareous soil. Once the wine is obtained, it is distilled twice using a Charentais still. The second distillation takes place in a secret cellar, called "Paradis," where the cognac is then aged in Limousin oak barrels for 30 years. It is during this period that AE Dor Cognac XO FC Dor develops the olfactory and flavorful aromas that make it unique. The winery, on the other hand, is well known in France and throughout the world for its refined production of cognac, which complements that of brandy, vodka and rum, always respecting tradition.

The Distillery: Produced by AE Dor in France. Founded in 1858, it produces the highest quality cognac. The secret cellar, known as "Paradis," preserves cognacs distilled before 1874. In 1951, the Maison was the only one to obtain authorization from the French government to sell cognac with an alcohol content of less than 40%. The white wine, obtained from the must, is distilled twice using a Charentais still: the first batch produces brouillis, which has an alcohol content of around 28-32%, while the second, "bonne chauffe," distillates at 70-72%.
