The demijohns are then left to age initially in dry cellars for a few years and then in humid cellars to complete the maturation process in a different atmosphere. The Cognacs of the A.E Dor Hors d'Age collection are stored in demijohns sealed with wax for decades, until the spirits reach their peak splendor and are ready to be bottled.
