Chardonnay Thou Bianc DOC - Cantine Bava

Chardonnay Thou Bianc DOC - Cantine Bava

Monferrato has proven to be a prime location for white grapes, which ripen well and, if harvested early, yield a high-quality product while maintaining a balanced sugar-acid ratio. Pressing of the grapes is followed by cold fermentation of the must, which is clarified; the wine is aged sur lie for six months in steel vats.

Tasting Notes: This Chardonnay fully expresses the terroir's character in its muscaté aromas; its distinctive notes of orange blossom, acacia, lime, banana, and honey also lend themselves to recognition. The dry palate is remarkably refined and ample, without the need for barrique aging: without oak, the wine expresses its best character two to five years after bottling.

Pairings: Excellent with baked lasagna with mushrooms or vegetables, risottos and main courses with fish or white meats but also with oriental dishes, with vegetables and white meats.

Training system: Low spurred cordon, calcareous soil with white marl at an altitude of 350 meters above sea level. The vineyard is completely grassed with grasses, legumes, and brassicas, cultivated to provide organic matter and protect the slope from rainfall erosion. Along the rows and between the plants, grass growth is controlled without the use of any chemical weedkillers.

The Winery: The Bava family's history begins in Cocconato, a village perched in the hills of the Monferrato area of Asti. The Bava family has been cultivating vineyards in this area since the 1600s. Today, the property extends into the Monferrato and Langhe regions, with vineyards and spontaneous woodlands cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced environmental impact. Driving past the Bava vineyards, you'll notice grass clippings and pruning residues used as natural fertilizer, wooden poles sourced from renewable forests, and grass cover between the rows, which prevents soil erosion and ensures the exclusion of herbicides. The three farms of Cocconato, Agliano, and Castiglione Falletto have been producing excellent and unique wines for generations. The wineries were founded in 1911 and have been pioneers in the use of barriques since 1975.
