Tasting Notes: Elegant pink color, fine and persistent perlage. The nose is clear and refined, starting with the intense fruity scents that are reminiscent of blackcurrants and wild strawberries, and are followed by spicy nuances. Moving on to the tasting, the palate is soft and deep, teased by a pinch of tannins, and with a long aftertaste, pleasantly balanced and characterized by slightly citrus hints.

 

Pairings: It is a great Champagne, among the most famous and well-known in the world. Special with seafood risotto.

 

The Cellar: The first Dom Pérignon Champagne was produced in 1936 by the Moët & Chandon maison thanks to the idea of Robert-Jean de Vogüe: the objective was to create a cuvée de prestige that embodied the absolute excellence of Champagne and that tasted collect the great legacy of the Hautvillers Abbey, property of the Moët family since 1829. To do this the chef de cave selected the best family reserves, bottling only the best vintages from 1921 onwards. The Vintage 1947 is the first Dom Pérignon Champagne no longer produced with the transvasage technique but born from an ad hoc harvest. Starting from Vintage 2000, Dom Pérignon acquired the status of an independent maison. Dom Pérignon Champagne is produced only in exceptional years from the best grapes coming exclusively from Grand Cru and, to a minimal extent, from the Premier Cru of Hautviller. The grapes used are Chardonnay and Pinot Noir. The art of blending is based on the pursuit of a continuous lack of balance capable of generating tension, energy and dynamism and also on a paradox that manages to create harmony: the graceful soul of Chardonnay combined with the power of Pinot Noir. An aporia from which one of the greatest Champagnes of all time was born: Dom Pérignon.

 

History: Pierre Perignon, known as Dom Perignon, was a French abbot who grew up in Sainte-Menehould, in the Champagne-Ardenne region. After becoming a priest, at the age of 30 he became Treasurer and manager of the vineyards of the Benedictine monastery of Saint-Pierre d'Hautvillers: an important task for a structure that supported itself by selling its own wine. It is precisely in this monastery that Dom Perignon invented champagne. There are two versions of the facts: the first says that, as often happens with brilliant inventions, the birth of Champagne was accidental. After having bottled some bottles of white wine, Dom Perignon noticed that some of them had exploded: the first Champagne was called "Devil's wine", for fear that the bottles would suddenly explode. The abbot thus realized that there was a way to make wine sparkling and discovered the second fermentation, i.e. the process through which carbon dioxide is developed after refermentation in the bottle. The second version has it that Dom Perignon, a great experimenter, purposely added sugar and flowers to bottled white wine and found how, after refermentation, he could develop bubbles.
