Company: Calvados is an apple cider brandy with a designation of origin, produced in Normandy, France. Domfrontains Calvados is produced by distilling apples and pears, the latter present up to 30%. The apples from which Calvados can be produced are divided into four categories: sour, sour-bitter, sweet-bitter and sweet, in relation to their level of sweetness, acidity and bitterness. There are precise rules according to which to choose the type of apple, and often, in the most complex ones, as many as forty can be used. The fruit is picked and pressed to produce a juice which, upon fermentation, becomes a dry cider with 6% alcohol by volume. It is then distilled in discontinuous or column stills and becomes brandy. Usually from the first distillation a spirit of 28-30% vol. is obtained, while the finished product must not exceed 72% vol. After at least two years of aging in oak barrels (called foudres), it can be sold as Calvados. The longer it ages, the more pleasant it becomes. Usually maturation lasts several years and allows for slight oxidation; some producers make a short stop in new barrels to transfer toasted notes. Half a bottle of twenty-year-old Calvados can easily be the same price as a full bottle of 10-year-old Calvados.
