The Distillery: Cachaça Ypioca is the result of 4 generations of distillers of the Telles family since 1846, when Dario Telles De Menezes became owner of the distillery. Cachaca Ypioca is the largest Cachaca producer in Brazil and produces excellent quality, traditional Cachaca. Its high quality is guaranteed both by the careful selection and sorting of sugar canes, and by the use of only 5 available varieties, which are carefully ground for 36 hours. This phase is catalytic since after this process it is fermented for the first development of the alcoholic degrees, and then carried out to distillation, a prerequisite for the creation of Cachaca. After distillation, Cachaca Ypioca is aged in approximately 20 different types of barrels, in order to develop and improve the aromatic and taste characteristics of the Cachaca. Finally, the blending process is a decisive point before bottling, to ensure the consistency of the taste profile of Cachaca Ypioca.
