The Penfolds California Collection is a project that began 20 years ago, when Penfolds winemakers first imported vine cuttings from southern Australia to plant them in sunny California vineyards. The four wines that make up this collection are true 'citizens of the world' that know no geographical boundaries and represent the concept of multi-regional winemaking. Made from Napa Valley fruit grown on vine cuttings originally from Australia, some of these wines are also derived from fruit from Australia. A product of Penfold's high quality standards, Quantum Bin 98 Cabernet Sauvignon is the flagship wine of the California Collection. The blend includes cabernet sauvignon from the greatest terroirs of the Napa Valley and premium shiraz harvested from the vineyards of southern Australia, for a wine that truly knows no boundaries.Vinification and ageing. This red wine from Penfolds is a blend of 87% Napa Valley cabernet sauvignon and 13% South Australian shiraz. Aged for 16 months in American (80% new) and French (20% new) oak.

Tasting Notes: Intense red colour, adorned with magenta highlights. The bouquet of this multi-regional red wine from Penfolds reveals aromas of ripe dark fruit: blueberries, blackberries and boysenberries and delicious hints of malt, mustard and cinnamon. It offers rich intensity and succulent acidity on the palate. A smooth structure reveals flavours of graphite from the vines and hazelnut, the result of oak ageing.

 

Pairings: Perfect with red meat dishes, game, mature cheeses and spicy dishes. Indeed, wild boar, venison and pheasant enrich the flavours of this wine, as do heavier dishes such as roasts and braised meats.

 

The Winery: Penfolds was founded by Christopher Rawson Penfold, a young English doctor firmly convinced of the healing properties of wine who, before leaving Great Britain to emigrate to Australia, procured rooted cuttings from the south of France. The small vines were planted near the cottage that Penfold himself built with his wife in 1845 in Adelaide. Until the second half of the 20th century, the Penfolds winery almost exclusively produced brandy and fortified wines, such as Port or Sherry, used for medicinal purposes. Towards the middle of the last century, in 1950 to be exact, depending on changing consumer tastes, the production of table wine began to be increased. Between the rows of vines, there is the utmost respect for the environment, for nature and for the ecosystem, so that the grapes that are harvested are all prized, straightforward and concentrated in all their organoleptic nuances. In the cellar, from destemming to pressing, from fermentation to ageing, from bottling to refining, each production step is constantly and scrupulously monitored, in order to always guarantee the highest possible quality level.
