    A pure Piedmont Chardonnay, for a quality brut sparkling wine, soft with great character and a very intense bouquet. The slow frothing using the long charmat method gives it a full and fragrant taste, with a very fine and persistent perlage. The first alcoholic fermentation takes place in steel vats for almost three weeks, at the end of which the wine is cooled to encourage the primary yeasts to settle. Secondary fermentation takes place in an autoclave, where the sparkling wine rests for 6 months on the yeasts before completing maturation in the bottle, during which the characters that determine its value are reinforced.

    Tasting Notes: A sparkling wine with an elegant, slow and continuous perlage that creates a pleasant crown of bubbles. Straw yellow colour, full and fragrant taste.


    Pairings: An excellent pairing is with langoustines or smoked salmon. The iodine contained in the fish finds a faithful companion in the characteristic acidity of the bubbles. It goes well with all cured meats, but with culatello it is decidedly regal. Even a well seasoned pasta or spaghetti alla marinara goes well with it, preferring the flakes of Parmigiano Reggiano or Grana Padano which are enhanced. Another perfect and unexpected pairing is with Tortelli di zucca.

     

    The Cellar: Giulio Cocchi was a young and creative pastry chef from Florence who moved to Asti at the end of the 19th century. He created original recipes for Barolo Chinato, Aperitivo Americano and different types of Vermouth, achieving success and fame in a short time. Giulio Cocchi's idea, exceptional for the time, was to open authorised retailers where these products could be tasted. Cocchi's was a well-known brand during the Belle Epoque and on the eclectic scene of the Futurist period. The Cocchi name and products soon became world famous as export records show: from New York to London, from Sydney to Africa and Venezuela. Cocchi placed a lot of attention on quality brut sparkling wines from single-varietal grapes, produced with the Italian method since the 1980s such as CocchiBrut and, more recently, the commitment to the creation and enhancement of the Altalanga DOCG, of which Cocchi is still one of the most committed champions. From its founder Giulio Cocchi, the winery has also inherited an inexhaustible vivacity and a quest for quality that has led it to be known and appreciated on five continents. All Cocchi products are wine-based and the recipes are the old-fashioned ones, codified on the basis of Giulio Cocchi's own intuitions. What defines the Cocchi style is therefore elegance and authenticity, the quality of the wine and ingredients, a hundred years of technical experience, a passion and creativity that have never failed over the years. Since 2012, Giulio Cocchi has been listed in the National Register of Historical Enterprises of Italy for its first 130 years of uninterrupted activity.
