The top of the range of Nyetimber's entire production is represented by the Sparkling Wine Brut "Tillington Single Vineyard", which comes to life from the grapes grown in the Tillington vineyard of the same name, particularly suited to the cultivation of chardonnay and pinot noir. A blend whose elegant and graceful aromas blend with an incredibly satisfying sip, where fresh mineral sensations alternate with yeast flavors, deriving from the slow aging of 38 months. Tasting Notes: In the glass it has a light golden yellow color, with a fine-grained, subtle and long-lasting perlage. The aromas on the nose are extremely elegant, with notes of red currant, raspberry, lemon and mineral hints. In the mouth it is creamy, full-bodied, rich, with a fresh and savory sip, incredibly persistent.

 

Pairings: Excellent throughout the meal, especially with first and second courses based on fish and shellfish. Also worth trying with recipes based on white meat, cooked with elaborate preparations, it gives its best with oysters.

 

La Cantina: Almost daily now, unfortunately, we hear the phenomenon of global warming discussed as a problem to be addressed with immediate responses, without further hesitation. The slow but continuous transformation of Earth's climates, due to the excessive pollution present on Earth, also affects the world of wine: we are in fact gradually witnessing a redefinition of geographical atlases, with new areas where viticulture can take root successfully. Among the areas that are experiencing an oenological rediscovery there is certainly England, which in the southernmost part, in Sussex, Kent and Hampshire, is specializing in the production of "Sparkling Wines" which, year after year, are establishing themselves increasingly as an alternative to French bubbles. This is because essentially the Champagne terroir is characterized by a climate which, in recent years, has been too mild, without those low temperatures which are fundamental for interrupting secondary fermentations in glass, whereas in England there are ideal conditions for the growth of chardonnay, pinot noir and pinot meunier. One company in particular is a master in declining these vines according to the traditional classic method: it is Nyetimber, a reality where geography, passion, climate and determination blend into one to give life to products of great personality. The winery, located in West Chiltington in West Sussex, is owned by Eric Heerema, and is spread over 170 hectares, characterized by a chalky subsoil and a microclimate that allows for a slow and constant maturation of the grapes.
