    Like all great wines, Barbera d'Asti also has its Crus. Stradivario is a wine of great character, produced only in the best vintages. It is long-lived and has a growth potential of at least 15 years, always maintaining the fresh color of the vine. Aged in barrique and bottled without filtration, it begins its life at least five years after bottling.

    Tasting Notes: It is full-bodied and has an intense ruby color with purple veins and harmonious tannins. With hints of black cherry, raspberry, candied apple, white pepper, plum and blond tobacco.

     

    Pairings: Recommended with white truffles, risotto, game, braised meats, stews and baked red meats.

     

    Breeding & Aging: Low spurred cordon in calcareous soil with white marls at an altitude of 350 meters above sea level. The surface of the vineyard is totally grassed with grasses, legumes and brassicas grown to provide organic substance and defend the slope from erosion by the rain. Along the row and between the plants, the growth of the herbs is controlled without resorting to any type of chemical weed control. Aged in barriques and bottled without filtration, it begins its life at least five years after bottling. Winemaking involves relatively short but intense macerations, with increasing temperatures until the maximum expression of its color is reached. After a slow and natural decantation, the wine is placed in new barriques for 18 months and then bottled without any filtration.

     

    The Cellar: The history of the Bava family begins in Cocconato, a town perched on the hills of the Monferrato area of Asti. The Bavas have been cultivating vineyards in this area since 1600, today the property extends across Monferrato and the Langhe, with vineyards and spontaneous woods cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced impact on the environment. Passing by the Bava vineyards, you can notice the grass clippings and pruning remains used as natural fertilizer, the wooden poles coming from renewable forests and the grassing between the rows which prevents soil erosion and guarantees the exclusion of herbicides. In the three farms of Cocconato, Agliano and Castiglione Falletto, excellent and unique wines have been produced for generations. The cellars were founded in 1911 and since 1975 they have been pioneers in the use of barriques.
