Tasting Notes: The color is particularly intense with ruby shades and violet reflections. The perfume does not hide its importance, you can smell aromas of coffee, spicy notes, such as pink pepper and red juniper, up to the fruity ones of cherry and plum. On the palate, its structure and robustness are appreciated, with a balanced acidity. It is enriched with a long and refined finish, leaving memories of wood and vanilla.

 

Pairings: The best pairings are those with meat sauces and important second courses which enhance its alcoholic richness and its good acidity.

 

The Cellar: A story that begins in 1862 in Canale. The origins of the Rabino family date back to the Middle Ages, the settlement in the Roero, in the same lands that are still owned by the family today, followed their removal from the Alta Langa due to the frequent barbarian incursions. Wine production began in the mid-19th century with a small production reserved for family and friends: a passion that still did not represent a profit. Luigi Rabino, grandfather of the current owner and subsequent descendants, will then market the wines. Already during the period preceding the world wars, many of the varieties still produced were bottled. Sharing, overcoming difficult historical moments of the 20th century and increased demand have made the company today a Roero reality with diversified and almost fully self-sustainable production.
