Barbaresco DOCG - Tenuta San Mauro

 

Fermentation takes place for 15 days in thermo-conditioned stainless steel tanks. Aged in medium toasted French oak barrique barrels for 12 months. Further refinement for 12 months in the bottle before marketing. No filtration or clarification before bottling. The average age of the vineyard is 15 years, harvest between the 1st and 2nd ten days of October. Application of integrated pest control and planting density of 4500 vines/ha.

Production of 6000 bottles per year, yield per hectare of 55 hl/ha.

Tasting Notes: Ruby red in color, the bouquet has hints of ripe red fruit, with strong hints of Boise accompanied by spicy notes. On the palate it is enveloping, full-bodied and persistent in the mouth. The evolution takes place over 20 years.

 

Pairings: Excellent with elaborate red meats, game and barbecues.

 

The Cellar: Cascina San Mauro is the main headquarters of the Estate, located in the municipality of Castagnole delle Lanze, a town in the Province of Asti which borders the municipality of Neive. The farmhouse was built on the top of the hill and recalls the classic Piedmontese courtyard of the mid-nineteenth century, closed by perimeter walls with a large central courtyard; the vineyards envelop the estate in a splendid photograph. Cascina Vallone is a small farm in the hamlet of Piani di Castagnole Lanze; the vineyard faces east with a view of the Langhe. The soils of this farm are sedimentary, particularly sandy and therefore suitable for red grapes. The vineyards, cultivated mainly with the Guyot cultivation system, produce fine wines. Tenuta San Mauro is an ancient family passion: Mauro took the pleasure of wine from his mother with the defense of authenticity at all costs and from his father the love for the land, for ancient agriculture, its traditions and its values.
