    Tasting Notes: Intense and brilliant color that fades from ruby to garnet, broad and airy bouquet. It expresses all the softness of well-refined Nebbiolo with round tannins and aromas of liquorice and violet; the potential for evolution is considerable.

     

    Pairings: Excellent meditation wine, it pairs perfectly with game dishes, meat stews, quails and roasted guinea fowl. It is particularly suitable for pairing bold and bold dishes and forms the ideal pairing with truffle-based dishes.

     

    Breeding & Aging: Guyot in calcareous soil with white tuff marl at 290 meters above sea level. The surface of the vineyard is totally grassed with grasses, legumes and brassicas grown to provide organic substance and defend the slope from rain erosion. Along the row and between the plants, the growth of the herbs is controlled without resorting to any type of chemical weed control. Fermentation takes place in steel vats with maceration for two weeks, followed by malolactic fermentation, before refinement begins in young oak barrels and then in the bottle.

     

    The Cellar: The history of the Bava family begins in Cocconato, a town perched on the hills of the Monferrato area of Asti. The Bavas have been cultivating vineyards in this area since 1600, today the property extends across Monferrato and the Langhe, with vineyards and spontaneous woods cultivated with the same sensitivity as in the past, for sustainable agriculture with a reduced impact on the environment. Passing by the Bava vineyards, you can notice the grass clippings and pruning remains used as natural fertilizer, the wooden poles coming from renewable forests and the grassing between the rows which prevents soil erosion and guarantees the exclusion of herbicides. In the three farms of Cocconato, Agliano and Castiglione Falletto, excellent and unique wines have been produced for generations. The cellars were founded in 1911 and since 1975 they have been pioneers in the use of barriques.
