Barbaresco Canova Riserva DOCG - Tenuta San Mauro

 

Fermentation takes place for 20 days in thermo-conditioned stainless steel tanks. Aged in oak barrels for 24 months, followed by another 24 months in the bottle. No filtration or clarification before bottling. Available 5 years after the harvest date. The average age of the vineyard is 30 years, harvest between the second and third ten days of October. Application of integrated pest control and planting density of 4500 vines/ha. Production of 4000 bottles per year, yield per hectare of 40 hl/ha.

Tasting Notes: Intense ruby red color with strong hints of dried flowers, spices and herbs, accompanied by intense notes of cocoa, truffle, hazelnut. On the palate it is structured, warm, very persistent, with elegant and fine tannins. Evolution in 30 years.

 

Pairings: Spectacular with elaborate and overcooked red meats, game and barbecue.

 

The Cellar: Cascina San Mauro is the main headquarters of the Estate, located in the municipality of Castagnole delle Lanze, a town in the Province of Asti which borders the municipality of Neive. The farmhouse was built on the top of the hill and recalls the classic Piedmontese courtyard of the mid-nineteenth century, closed by perimeter walls with a large central courtyard; the vineyards envelop the estate in a splendid photograph. Cascina Vallone is a small farm in the hamlet of Piani di Castagnole Lanze; the vineyard faces east with a view of the Langhe. The soils of this farm are sedimentary, particularly sandy and therefore suitable for red grapes. The vineyards, cultivated mainly with the Guyot cultivation system, produce fine wines. Tenuta San Mauro is an ancient family passion: Mauro took the pleasure of wine from his mother with the defense of authenticity at all costs and from his father the love for the land, for ancient agriculture, its traditions and its values.
