It is still a young wine but finesse and balance can already be perceived. It has exceptional character, something that many Valpolicella wines would aspire to have. It is the undisputed symbol of the Speri company, which produces this Amarone with a careful selection of the best bunches harvested in the Monte Sant'Urbano cru.

Tasting Notes: Deep garnet red. It has an ethereal and harmonious scent, with hints of red fruit, dried plum, liquorice and spices. When tasted it proves to be warm and enveloping, dry and of rare elegance. It is delicate but at the same time vigorous.

 

Pairings: Requires structured second courses and preparations based on red meat or game. It can also be enjoyed alone at the end of dinner. Perfect with woodcock crostini.

 

The Cellar: Speri makes wine exclusively from the grapes coming from its own vineyards and has always cultivated only native Valpolicella vines (Corvina, Corvinone, Rondinella, Molinara and other indigenous varieties). Respecting the biodiversity of the terroir and with the aim of maintaining the highest level of quality, the Speri family, after years of observation and field experimentation, already in the early 1990s, made some significant changes to the traditional farming system, the Pergola Veronese. The most significant improvements are the inclination of the metal arm on which the branches of the vineyard rest and the central opening which guarantees greater radiation and ventilation of the bunches. This new cultivation system is called "Open inclined Pergoletta", but in the area many still call it "Pergoletta Speri": today it is the most widespread system in Valpolicella and the most effective for the cultivation of vineyards on the hills and for the production of Amarone. The hillside vineyards are cultivated on terraces made up of dry stone walls also called "marogne": these, in addition to being a valid tool for improving hillside cultivation because they slow down run-off and make the soil safer, also have a high historical value and ecological. Thanks to the sunlight, in the cold season these walls become solar collectors. A dry terrace on a hill is practically a condominium of various insects that find shelter in the wall maintaining the ecological balance; there are all types, from the largest to the smallest. Protecting a blight means protecting biodiversity. The Speri company only makes wine from the native grapes of Valpolicella: together with the three traditional grapes Corvina, Rondinella and Molinara, small percentages of other minor but historic varieties such as Oseleta, Rossanella, Pelara, Cabrosina, etc. are also used. Corvina is considered the most important vine for its supply of tannin and coloring substances. It imparts fruity aromas, especially if grown on hills. Rondinella has the property of adapting to various types of soil, resisting drought and lends itself quite well to drying. It is very vigorous and has good productivity. Molinara is used above all to bring a certain flavor and freshness to the wine. The production area of Valpolicella - currently there are around 8000 hectares of vineyards registered in the register - is an area delineated to the north by the Lessini mountains, to the south by the Veronese plain, to the east by the Soave area and to the west by the Adige river. The oldest original area, called Classica, where the cellar and vineyards are located, is made up of a series of parallel valleys that creep into the southernmost reaches of the Lessinia plateau, north-west of Verona. Thanks to the protection of the mountains as well as the mitigating action of the nearby Lake Garda, Valpolicella Classica enjoys a mild climate which is particularly suitable for the cultivation of vines.
