Alta Langa Brut Classic Method DOCG - Tenuta San Mauro

 

After soft pressing, alcoholic fermentation takes place in barriques, where the wine remains for approximately 6 months; it is subsequently bottled for secondary fermentation. Aging with wine left to rest on the yeasts for a minimum of 36 months, subsequently transferred to the pupitre for the Remuage process which lasts approximately 45 days. Bottled after dégourgement and adding the liqueur d'expédition. This is followed by corking and subsequent refinement in the bottle for approximately 3 months. Grapes 70% Pinot Noir and 30% Chardonnay, vineyard located in Alta Langa, at an average altitude of 500m above sea level, exposure to the east and west. Guyot and spurred cordon in medium-textured calcareous soil. The average age of the vineyard is 15 years. Harvest between the 1st and 2nd week of August. Application of integrated pest management and planting density of 4000 vines/ha. Production of 1000 bottles per year, yield per hectare of 70 hl/ha.

Tasting Notes: Intense straw yellow color, with fine and persistent perlage. Fine and intense bouquet with hints of bread crust and dried fruit. On the palate it is complex, balanced and creamy; well structured with a lively acidity with a long and persistent finish.

 

Pairings: Recommended throughout the meal, it enhances fish and white meat dishes. Also excellent with medium-aged cheeses.

 

The Cellar: Cascina San Mauro is the main headquarters of the Estate, located in the municipality of Castagnole delle Lanze, a town in the Province of Asti which borders the municipality of Neive. The farmhouse was built on the top of the hill and recalls the classic Piedmontese courtyard of the mid-nineteenth century, closed by perimeter walls with a large central courtyard; the vineyards envelop the estate in a splendid photograph. Cascina Vallone is a small farm in the hamlet of Piani di Castagnole Lanze; the vineyard faces east with a view of the Langhe. The soils of this farm are sedimentary, particularly sandy and therefore suitable for red grapes. The vineyards, cultivated mainly with the Guyot cultivation system, produce fine wines. Tenuta San Mauro is an ancient family passion: Mauro took the pleasure of wine from his mother with the defense of authenticity at all costs and from his father the love for the land, for ancient agriculture, its traditions and its values.
