Preparation for Saffron Risotto - The Wild Cherries

 

Origin: Italy, Piedmont

Format: 300g

Ingredients: Carnaroli rice (country of origin Italy), onion, turmeric, saffron (1 AAA category) (0.02).

Allergens: Produced in a facility that uses tree nuts, sulfites, celery, mustard and sesame.

 

Preparation method: In a large pan with a drizzle of already hot oil, pour the "Risotto preparation" and brown for 1 minute over a moderate heat. Stirring constantly, pour in half a glass of water (or white wine) and allow to evaporate. Pour 700ml of hot water little by little and let dry completely (15 min). Add salt to taste. Add a knob of butter, stir for 1 minute.

 

The Cooperative: The Wild Cherries were born in 2011, in the province of Cuneo. The objective of the Cooperative is the employment of disabled people in the agricultural field, facilitating their socialization, learning abilities, skill development and thus promoting social cohesion and improving the quality of life. ​​​​​​​The Spaces are made up of a mountain plot at 1800 m above sea level, of approximately 14 hectares in the municipality of Canosio, used for the cultivation of genepy, edelweiss and various medicinal herbs. A hilly plot of approximately 4 hectares in the municipality of Manta, used for the cultivation of fruit and vegetables; laboratory with transformation of agricultural products in Verzuolo.
