This extra virgin olive oil was produced by harvesting, strictly by hand, the olives produced in the olive groves owned by the company. The milling takes place during the day with cold extraction and mechanical procedures, then it is left in stainless steel tanks to rest and refine. The bottling is artisanal, without further filtration to ensure that it does not lose the aromas, authenticity and naturalness of an extra virgin oil from freshly harvested olives. This accounts for any sediment at the bottom of the bottle.
